Allow me to customize what options appear in the payment methods drop-down when accepting a payment from a client's ledger. We accept other forms of payment like state vouchers, PayPal, grants, etc. so that we can report on these.

When viewing the details of an invoice show whether it was a client payment or insurance payment under "Invoice Payments and Refunds" and "Unapplied Payments".
Move "Record Payment" and "Charge Payment Method" buttons away from each other.
Move "Record Payment" and "Charge Payment Method" buttons away from each other because it can be easy to click the wrong button and not realize you didn't charge the client's card.
